Sometimes you can't be bothered to make a nutritious meal from scratch and you just need something that's quick, easy and convenient. To help you feel cosy and satiated this autumn, one food content creator shared how you can completely transform bland mashed potatoes into a proper nutritious dish with bag loads of flavour.
TikTok creator Jess, better known as Recipes with Jess, recently shared her take on a comforting mash recipe as a part of her '30 Days of Cosy Comforts'. All you need is a few extra ingredients to give the potatoes a makeover. Consider cheese, bacon and broccoli.
Speaking about the dish, Jess said: "This is based off a recipe my Nana Alma makes for me but simplified to make it the easiest possible weeknight dinner."
You don't even need to make your own mashed potatoes, with Jess recommended opting for ready made mash instead. This will make midweek cooking so much more convenient.
Jess' recipe serves three people, and has 542 calories and boasts 44.6 grams of protein per serving.
She continued: "It's basically just the perfect excuse to eat a bowl of mash for dinner, and I can't wait for you to try it."
Jess' video has been viewed over 266,900 times, receiving 8,426 likes and 61 comments. One person wrote: "This sounds yummie I'm going to give it a go."
Another suggested: "Smoked salmon instead of ham and a bit of horseradish."
Helen said: "I'm not a huge fan of mash potato I find it too heavy but I would try this as it looks lovely."
Carly commented, "Ooohh this looks so good. Definitely going to try this," while another replied, "Oooh I'm going to try this one, looks delish! Thinking about adding fried onions or bacon instead of ham."
This is how you can transform your regular, bland, boring mashed potatoes into a wonderful comfort dish at home.
Ingredients
- 800g pre made mash potato
- 16 bacon medallions, cooked and diced
- 400g broccoli florets
- 80g reduced fat cheddar, grated
- 30g mozzarella, grated
- One tbsp Dijon mustard
Method
Heat your mash according to packaging instructions to make it easier to work with, and do the same with your broccoli florets. Cook until soft.
Add your mash, cooked broccoli, and bacon to a large bowl, along with a hefty amount of salt and pepper; mix until fully combined. Then add in 60g of your cheddar and your mustard, then mix again. Taste for seasoning.
Spray a baking dish with some cooking spray then add in your mash mix, pressing it out with the back of a spoon, being sure to fluff it up at the top to get a little crispy.
Sprinkle over your mozzarella and remaining cheddar, then bake at 180 (fan) for 25 to 30 minutes, or until the cheese is golden and crisp.
Serve with beans or ketchup, or even gravy, and enjoy.
