Roast potatoes are a staple in British cuisine, and luckily they go with just about any meal. While goose fat and oil are usually used to help the spuds achieve their crunchy skin and fluffy inside, one food content creator has argued that there's another ingredient which is just as good.
TikTok Madeleine Wilmshurst, who goes by @fannychupp on social media, revealed that clotted cream should be on your radar for perfecting roast potatoes. Previously working with the brand Cornish Sea Salt, Madeleine urged people to "forget goose fat" when cooking their spuds. The recipe ended up going viral.

She said: "The potato stays fluffy and creamy inside."
Madeleine has been comparing different fats to perfect her spuds. She described lard as "exceptional" and olive oil as "disappointing".
She continued: "Quite possibly the most British way to cook your potatoes."
After peeling, parboiling and chuffing the potatoes, Madeleine added a liberal amount of clotted cream to coat them, before adding a dollop more before roasting in the oven for good measure.
She said: "These definitely feel illegal. The crispy bits that you get in the bottom of the tray are out of this world. I don't think you get that with any other fat."
Upon trying the roasties, Madeleine described the skin as "crispy, but not too crispy" on the outside, while being "buttery soft" in the middle. She described the flavour as being reminiscent of brown butter.
Madeleine continued: "I think this is the sort of thing that is absolutely perfect for Christmas Day because it is so indulgent, and if you've got people coming over, it's something just a little bit different to bring out to your Christmas table, and they taste unreal."
Madeleine's video has already been viewed over a massive 724,700 times, receiving 47,000 likes and 798 comments. Her choice of clotted cream seemed to divide food fans, with Hayley saying: "Lush! but goose fat is elite."
Another wrote: "I suppose clotted cream is basically a very good quality butter."
Alison agreed, "My mouth watered sooo much watching this, I'm definitely gonna try," while Juliet replied, "I have NEVER seen a more exciting TikTok."
Beck commented: "Watching this hungry and hungover is like pulling teeth but they look divine."
Here's how you can make clotted cream roast potatoes at home.
Ingredients
- Half a tub of clotted cream
- Maris piper potatoes
- Salt
Method
Chop your potatoes into quarters, before placing them in a sauce pan of heavily salted water. Boil the potatoes for around 15 minutes until they are tender. You can test with a fork.
Drain away the water, keeping the potatoes in a colander. Allow to steam dry over the saucepan for five to 10 minutes, covering the colander with a clean towel.
When the potatoes are dry and still hot, return them to the saucepan. Spoon the clotted cream in the saucepan and give them a mix, allowing the clotted cream to melt.
Add a small sprinkle of salt. Pour the potatoes onto a pre-heated baking tray, separating them slightly.
Roast in the oven at 200 for around 45 minutes to an hour, or until the potatoes are golden and crispy. Then serve and enjoy!
